I’ve tried, and failed, to make protein pancakes several times. I could never get the consistency the way I wanted them, but this one definitely fits the bill!
I love the combination of chocolate, peanut butter, and banana, because how can you go wrong with that!? This has just enough nuttiness from the peanut butter, and the bananas add the right amount of sweetness without being too much.
Some things to note:
This protein pancake batter is a little thicker than normal pancake batter, so you might want to spread them out a bit when you portion them in the pan.
The pancakes take a bit longer to cook than regular pancakes, so don’t be nervous if you notice they are not quite done when you think they should be.
If you do want a thinner batter, I would simply add about ¼ cup of almond or oat milk when blending.
