If you were to ask me for my favorite dessert, in an instant I would answer brownies. I love fudgy, rich, delicious brownies that are on the verge of being raw they are so gooey. And I LOVE the traditional recipe, BUT I’m also very aware that both gluten and dairy do not always agree with me, so in order to combat my craving but maintain my health, I have come up with a delicious gluten free, dairy free, peanut butter brownie. And let me tell you...It. Is. Gooooooood….
So, how did I create a decadent brownie with no gluten and no dairy??? Well, the secret is in the combination of gluten free flours and coconut oil!
I used cassava flour and arrowroot flour in place of traditional all-purpose flour, and I used coconut oil in place of butter. I truly did not miss the flour at all!
Something to note, however, is that you do NOT want to overbake the brownies, so you MUST...I repeat...you MUST take them out of the oven AS SOON as your timer goes off.
