Salmon Niçoise Salad with Roasted Veggies

Niçoise salad has always been one of my favorites. I especially love this version with roasted veggies. Plus, you can’t beat the heart healthy benefits of a nice fillet of wild caught salmon. Don’t let the ingredient list intimidate you, because it’s another great make ahead option, and you can easily double the recipe for lunch during the week. It’s well worth the effort.

A few tips and tricks

One thing to be sure of is that your potatoes are all relatively small (about 1 inch or so), so you may have to cut them down a bit.

Also, be sure you don't overcook your tomatoes. Nobody needs a too-mushy tomato n their life!

My family thinks it's weird, but my mom and I love soggy salad. I'm not talking about gross lettuce leaves that are wilted and brown. I'm talking about the leftovers when you made that big bowl of salad for the birthday party, and there is just a little bit leftover at the end of the night. You wrap that up and put it in the fridge for lunch the next day. It's strange, I know, but this salad makes the perfect "next day soggy salad".
