I’m all about a make-ahead meal, especially a breakfast option! Mornings are about to get busy around our house, so I’m searching for ways to make our days (and nights!) a little bit easier. These bars are lower in sugar, higher in fiber, and pack a flavor punch with the addition of mixed berries.
I like to use frozen berries in the recipe for several reasons.
Berries are frozen at their peak of freshness, so they almost always have the best flavor and are highest in nutrient content.
They’re easy to kind and keep in the freezer!
They mix into this recipe without becoming a mushy mess! On that note: be sure to fold your berries into the mixture when they are still frozen! If you let them thaw out, they will turn your mixture a weird grayish-pink color. Not appetizing!
NOTE: To make oat flour, simply place the oats in a blender and turn it on medium power until oats form a powder that is flour-like consistency.
