It’s getting closer to the holidays, but I’m not totally ready to give up on pumpkin just yet! Plus, pumpkin is a great way to add a dose of fiber and antioxidants to your diet.
I ADORE pumpkin flavored desserts, and I also love a quick healthy breakfast on the go. Now that my third baby is here, I spend a lot of my days nursing and scrolling through my phone. There is no shortage of overnight oat recipes, and I think this one ranks up there at the top.
Along with breastfeeding my third babe, I’ve also had to eliminate dairy from my diet for a third time. While none of my kids has a dairy allergy, they have all been sensitive to it through my milk. Plus, I try to avoid too much dairy at all times, but I digress.
I have found the combination of oat milk, pumpkin, and almond butter to provide the perfect amount of creaminess to this quick breakfast.
